Peanut quinoa Thai salad

I love this recipe because it suits most dietary needs. It’s vegan, grain free and gluten free, making it suitable for the majority of healthy food addicts. The salad includes three of my favourite ingredients – peanut butter (obvs), ginger and quinoa – all super foods in my opinion! And, if you can’t do without protein, it’s easy to add a bit of chicken to the mix.

Peanut quinoa salad

Serves: 2

What you need

  • 2 cups cooked quinoa
  • ½ cup carrots, sliced
  • ½ cup sugar snap peas, halved
  • 2 medium scallions, sliced


  • ½ cup peanut butter
  • 2 tablespoon fresh squeezed lime juice
  • ½ teaspoon red chilli pepper flakes
  • 2 cloves garlic, crushed
  • ½ teaspoon fresh ginger, grated
  • 1 tablespoon vinegar (e.g. apple cider vinegar)
  • salt to taste
