Healthy brownies

Who doesn’t like baking in the weekend?! So to help you, I started my own little bakery in my kitchen and made this delicious healthy brownie with…Sweet potatoes! I can imagine you’d rather associate a brownie with chocolate than a potato. However chocolate is rather unhealthy for us, and you’ll be surprised how this potato can almost make the brownie taste as good as the double chocolate starbucks brownie. Yup!

So, why do I use the sweet potato? Aren’t potatoes a no-go? Well, this potato is an exception! The sweet potato is a source of vitamin A, B6, C, Beta-carotene, iron and calcium. In addition, it has little impact on your blood glucose level, which means you’ll feel satiated for a longer period of time. Exchange the normal potato for the sweet variant and your body will be so thankful!

What you need for approximately 8 pieces:

– 2 sweet potatoes
– 100gr dates
– 100gr buckwheat
– 4 tablespoons raw cocoa
– 1-teaspoon vanilla extract
– 1 bag of baking powder
– Pinch of salt

How to make it:

– Boil some water, peal the sweet potato and cook for 15 minutes (until it is soft). Let the potato cool down (you could do this by putting it in cold water).

– Heat the oven at 180 degrees. Put the dates in the food processor just as long until it becomes a soft paste. Then add the potato, raw cocoa and vanilla extract.

– Mix the buckwheat and the baking powder in a different bowl with a pinch of salt. Add the chocolate mixture and bled everything.

– Place the baking paper on a small casserole; pour the mixture in the casserole and place in the oven for about 30 minutes.

– When the 30 minutes have passed, pierce a sate stick in the brownie to see if it is ready. If the sate stick comes out clean, the brownie is ready.

Healthy cauliflower pizza

Pizza is definitely one of my top three guilty pleasures. With a minimum of 1000 kcal and all those saturated fats, it is not particularly healthy. That’s why there is a cauliflower pizza; A wonderful and skinny variant with many, many vegetables.

Like I said earlier, the upcoming months I will post more healthy pizza varieties, as I don’t think I am the only one who considers pizza as a guilty pleasure. This healthy version has a bottom made of cauliflower. The cauliflower will become nice and crispy when you bake it in the oven, just like a ‘real’ pizza. As a topping, choose your favourite vegetables for toppings.

A responsible and delicious meal, that will taste exactly like the ‘original’ pizza.

What you need:

– 1 big cauliflower
– 1 egg
– 1 bell pepper
– 100 gr. cherry tomatoes
– 1 red onion
– 150 gr. cottage cheese
– Fresh tomato sauce
– Fresh basil
– Salt, pepper & oregano

How to make it:

– Pre-heat the oven at a 170 degrees. Cut the cauliflower in small parts and cook them in water for about 8 minutes, until they’re ready. Let all the water drip off the cauliflower, make sure it’s dry. Then put the cauliflower in a food processor and mix until the cauliflower is fine powder. Then put the mixture in a kitchen towel and squeeze the towel, because a lot of water will still come out. Mix the cauliflower with the egg, some sault, pepper and oregano.

– Cover-up the baking plate with baking powder and a little olive oil and spread the mixture equally over the baking plate. Make sure that it becomes a thin and equal layer. Bake in the oven for about 30 minutes.

– While the cauliflower crust is getting ready in the oven, you can cut your favourite vegetables the way you’d like them.

– Season the tomato sauce with oregano, salt and pepper.

– Take the cauliflower crust out of the oven and spread the tomato sauce over the crust. Then sprinkle your favourite vegetables over the pizza, add some cottage cheese and last but not least, the basil.

– Bake the pizza in the oven for 10 more minutes.

Chocolate mousse

I’m pretty sure chocolate mousse is a guilty pleasure for the most of us. It is without a doubt one of my biggest guilty pleasures. If I go out for dinner, I always order the (unfortunately unhealthy) chocolate mousse. Most of the time it is filled with unrefined sugars, whipped cream and –obviously- chocolate. Once in a while these are okay, but for the ones who can’t live with a ‘once in a while’, I have created a healthy variant. Because that’s just who I am, haha. 

This chocolate mousse is very creamy. This is due to the avocado. You might think, why an avocado in the chocolate mousse? Well, avocado is a wonderful source of healthy nutritions like protein, potassium and healthy fats. The protein gives you a satiated feeling which will stop the food craving. The potassium will help your natural digestion and take away toxic from your body. And the healthy fats will give us enough energy for the rest of the day. You can easily eat this chocolate mousse without any feeling of guilt.

Apart from the avocado, this mousse contains raw cacao powder, honey and coconut milk. Cacao powder is a little vitamin-bomb and therefore a super healthy snack! A perfect way to survive the Wednesday (and your chocolate cravings! Hihi).

What you need for one portion:

How to make it:

  • Take the skin off the avocado and cut the avocado in big parts.
  • Mix the avocado in a blender, add the coconut milk, cacao powder and honey.
  • Mix for 30 seconds until the substance is creamy and soft.

Healthy pancakes

The pancake is a typical Dutch dish. A delicious pancake with bacon, syrup or my beloved friend Nutella, wrap it up and enjoy! Because of the spread, white flour, full milk and the egg yokes the calories are adding up quickly. Not particularly a healthy meal. Do you still feel like eating something sweet that isn’t too bad for your health? Than these buckwheat pancakes are the ultimate solution!

To keep this recipe skinny, we’ll only use the egg whites and we’ll use buckwheat flour instead of white flour. Buckwheat is gluten-free and gives you a satiated feeling. It improves the immune system and improves the functioning of the muscles. Use fresh or frozen fruits instead of the bacon, cheese, syrup or sugar. Success guaranteed!

What you need for 1 person:

– 40 gram of buckwheat flour
– 2 egg whites
– 100 ml water
– 1 teaspoon cinnamon
– pinch of salt
– 50 gram of blackberries, blueberries or raspberries

How to make it:

– Mix all the ingredients (apart from the fruit) in one bowl.Leave it to rest for about 5 minutes.
– Heat up a pan with olive oil or coconut butter and make sure the pan is really, really hot.
– Pour the mix slowly in the pan and lower the fire. Bake the pancake on each side for approximately 3 minutes.
– Optionally: mix and squeeze the fruit in order for it to become a little bit like a jam/marmalade.

Oats are hot

Summer is gone and autumn is here. And even though Christmas is still two months away, I‘m already thinking about winter, doesn’t everybody? During the colder days I love enjoying comfy food with a cup of hot tea. For me, comfy food is food you can eat in your pyjama on the couch.

Oats can be classified as comfy food. Oats with fruit, oat cookies or you can eat it the way I do: baked oats with blueberries and cinnamon. Thanks to the cinnamon the kitchen smells delicious and this will create an autumn ambiance. Oats are a good source of energy. The energy in oats make sure you can go on a few hours during the day without feeling hungry. The cinnamon makes you feel warmer and it also increases your resistance. Therefore, this is the perfect dish to survive the cold autumn days.

What do you need for 4 servings:

  • 200 gr of oatmeal
  • 600 ml of water
  • 1 egg white
  • 2 tablespoons of cinnamon spice
  • 8 drops of stevia or 1 tablespoon honey
  • 1 teaspoon baking powder
  • handful of blueberries

How to make it:

  • Preheat the oven for 190 degrees.
  • Mix the oatmeal, egg whites, cinnamon spices and sweeteners.
  • Grease a baking pan with butter or coconut butter.
  • Stir the baking powder together with the oatmeal and pour the mixture into the baking pan.
  • Sprinkle the blueberries on to the oatmeal and put the cake for 30 minutes in the oven..
  • Optional: top with some Greek yogurt or quark.

Healthy cheesecake

Everyone is having their sweet cravings (although, I think I have them a little more often than the average human being, hihi). You can have them now and then, but unfortunately not to often because they are not really healthy and they contain too much sugar and saturated fats. So how can we solve this problem? You can eat this cheesecake without feeling guilty. Hallelujah, that sounds like a really good invention don’t you think? And it’s even getting better, it is not only delicious but very easy to make!

All unhealthy ingredients such as whipped cream and chocolate can easily be replaced by much healthier options. This cake is made of quark, fresh fruits and nuts, which are all very healthy products. That’s why you can turn this cake into an everyday guilt free snack. The protein enables you to feel full faster and therefore make you eat less. That is what you call a win-win-situation isn’t it?

What you need

  •  1-3/4 cups almond flour
  • 3.5 cups non-fat quark
  • 1-2/3 cups nuts/seeds
  • 2 tbsp natural honey
  • 2 cups red fruits (I use blackberries, raspberries and pomegranate)
  • 5 pieces of gelatin
  • 150 ml water

How you make it

  • Mix the almond flour together with the nuts, honey and water.
  • Line a baking pan with parchment paper and grease with some olive oil.
  • Now spread the dough on the bottom and push fine. Put in the refrigerator for 10 minutes.
  • Soak the gelatin in cold water for 5 minutes.
  • Heat 2 tablespoons of quark in a small pan.
  • Squeeze the gelatin and add to the heated quark. Gently scoop the rest of the quark and stir until one smooth mixture.
  • Now pour the quark on the dough in the baking pan and put in the fridge for 2 hours.
  • When you want to serve the cake, mix the fruits together so it becomes one smooth mixture.

Yummy chocolate milkshake

I think that everyone is sometimes craving for it: a rich and yummy chocolate milkshake. At least I do, because most of you already know that I’m addicted to chocolate. Most of the times those chocolate milkshake are made with whole milk, refined sugars and fat chocolate. This is not really good for your body and you will notice that your body is craving for more sugars after eating this. That’s why I must eat 1 whole bar instead of one bite;-) Because my body got a sugar rush of the wrong ingredients.

I like to experiment with food and find healthy replacements for something that I really want, like this chocolate milkshake. I’m not me when I don’t add healthy ingredients. This healthy milkshake contains raw cocoa, almond milk, 1/2 avocado, 1/2 zucchini, banana and coconut. I can guarantee you that this milkshake is as smooth as one with whole ingredients. And this one is even better and healthier! Yumm..

What do you need?

  • 1 big tablespoon raw cacao
  • 2/3 cups almond milk
  • 2/3 cups water
  • 1/2 banana
  • 1/2 avocado
  • 1/2 zucchini
  • 1 teaspoon coconut

How to make it

  • Peel the zucchini and cut together with the banana and avocado into small pieces.
  • Stop into the blender with almond milk, water, cocoa and coconut.

Clean banana pancakes

Oh my, oh my, this is so delicious! You’ve probably seen them on other blogs or websites: the banana pancakes. I have to confess I’ve tried them last week for the first time. For lunch I have a green smoothie with an apple and an extra piece of fruit everyday. So plenty of fruit in my opinion. However, when I tried these babies for the first time I was hooked! This is so good! So my conclusion is: one of the best breakfasts ever!

This delicious meal is perfect for breakfast and lunch

Recipe for 4 pancakes

–       1 banana
–       2 eggs
–       1 tbsp of cinnamon
–       Optional: honey and fruit

This is how you do it

–       Mash the banana on a plate and whip the egg in a bowl. Add the mashed banana to the egg and mix it up.
–       Add the cinnamon. Pour the mix into a small soup spoon and scoop the mix into the frying pan that is on a small fire.
–       Let the pancake bake for a while on only one side. After this, turn the pancake. If you think it’s going to break, then you should not yet flip the pancake but bake it on the same side for a while.
–       Bake the other side until the pancakes have nice brown color.
–       Put the pancakes on a plate and garnish with some honey and some cinnamon.

Sugarfree Wannabe Nutella Cake

What’s better than baking a healthy cake on a lazy Sunday afternoon? Absolutely nothing…Hmmm, and it was delicious.

How it all started…Like many of you know, I have one weakness (some might call it an addiction) and it’s Nutella. I would love to eat a whole jar of Nutella, but unfortunately Nutella is stuffed with, as we all know, sugars. And this is exactly what I’m trying to avoid. So I started thinking…Is there a solution for this problem? Can I eat Nutella in a healthy way? And just like that, I came up with an idea! A healthy “Nutella”  cake.

Roughly said, Nutella is made of chocolate, hazelnuts and sugar. So we replace the chocolate by raw cacao, we replace the sugar by dates and we keep the hazelnuts. We make the cake gluten and lactose free and add some grated zucchini.

The result is awesome! Of course, the cake isn’t comparable to the real Nutella, but I think it’s a delicious and healthy replacement. So if you wanna eat healthier, but still want to make a Nutella/ chocolate cake, this recipe is perfect for you! It’s also very easy to make for parties, because almost everyone can eat this cake!

Recipe for 1 cake. 6 portions:

– 300 gr. of buckwheat
– 250 ml. water
– 150 gr. grated zucchini
– 1 tbsp of honey
– 1 egg
– 2 tbsp of raw cacao spices
– 1 tbsp cinnamon spices
– 2 tbsp of baking soda
– 5 dates
– 200 gr of coarse hazelnuts

How to do it:

– Preheat the oven at 170 degrees.
– Put the dates for 10 minutes in a bin with boiled water.
– Put the egg, water, honey and zucchini in 1 bowl and mix it.
– Mash the dates with a fork and add it to the mixture together with the cacao and cinnamon spices.
– Add the buckwheat to the mixture and mix it for 1 minute.
– Lastly, add the backingsoda and mix it again for a short period of time.
– Add the hazelnuts and put everything together in a cake mould.
– Bake the cake for 50 minutes.

Delicious frozen yogurt bites

Don’t you think these frozen yogurt bites look beautiful?? And will you believe me when I tell you that they’re super delicious and really healthy as well? Yep, and it even gets better… They’re also extremely easy to make!!!

Since most granola bars are rich in sugar, I wanted to find a new alternative that would fit perfectly in my healthy lifestyle. Unfortunately, you can’t take it with you in your bag (it melts after 15 minutes) but eating these bites on the couch during your favorite TV show is awesome. I will explain to you how to make this delicious snack. I’m going to use fresh fruit and some superfoods but you can actually add whatever you want. Although, I would still recommend you to stick to the fruit, nuts and superfoods.

What do you need;

– 400 gr skinny mold quark/ 0% Greek yogurt
– 3 tbsp of fresh fruit
– 2 tbsp of nuts in small pieces
– 2 tbsp of goji berries
– 1 tbsp of cacao nibs

How to make it;

– Mix all the ingredients in one bowl
– Put some plastic foil in a tray or a pan
– Scoop the yogurt on the foil and spread the yogurt to the sides until it’s a fixed whole
– Put some new plastic foil on top of it
– Put the tray or the pan in the freezer for 2 hours
– Get it out out of the freezer and leave it for 5 minutes
– Cut the frozen yogurt into little bars and put the remaining bars back into the freezer in a closed tray or pan.

When I eat one of these delicious ‘frozen yogurt’ I pick one and leave it for 5 minutes. Of course, I don’t have to tell you what happens next… Yumm!!

In Love With Health, how it all started…

When I couldn’t get myself of the couch once again, I decided to change my life completely! I was done with my lazy and lifeless lifestyle of hardly doing any work outs (terrible…I know) and eating whatever passed me by all day long. I learned the hard way: it’s easier saying this than actually doing it.

Unfortunately, it took a lot of effort. When my boyfriend made one of his delicious pasta recipes with cream sauce and was eating it with so much joy on his face, I was kind of bummed out that I had to eat my salad with chicken. It honestly took me a lot of effort to not eat his food! But only after 1 month, this healthy life has turned into my lifestyle without a lot of struggles. That pasta with creamy sauce doesn’t hurt me anymore and that bag of fries? Nah.. Just give me my Quinoa salad or a delicious vegetable/fruit smoothie. (Allright, I’m not completely honest right now, I still eat chocolate cake or a nice sandwich with Nutella! Ssst..)

The most important changes when I changed my lifestyle were that I got healthier, fitter and was full of energy! A glorious feeling!  In the past, I’ve been avoiding gyms for so many years, but I now find it wonderful to work out three or four times a week. Who would’ve ever thought that I would do this?! Another plus is that I not only changed on the inside, but also on the outside (Read: the days of love-handles are as good as over).

Zucchini spaghetti

I have an absolute delicious dish for you to introduce this new weekly post: zucchini-spaghetti! Before I changed my entire lifestyle I could eat plates full of spaghetti. As a result, I ate way too many calories and ended up feeling bloated. I’m still hooked on Italian food and only thinking about it makes my mouth water…Unfortunately it’s not really clean, obviously. That’s why I came up with this great healthy alternative so you can enjoy without feeling guilty! These green strings are in fact super healthy and are packed with vitamins, minerals and fiber. In addition, it contains way fewer calories, which is a good thing!

p.s. for my beloved man I used whole wheat spaghetti instead of the zucchini-spaghetti. Obviously still very healthy because of all the fresh ingredients.
