The warm and hot summerdays are over and fall is welcoming us with rain and days spent full with baking! I absolutely love spending time in the kitchen and especially when days become colder and grey. Life is brighter and filled with more joy when you smell the divine scent of a healthy and tasty pie. You may already have become acquainted with my selection of plant based protein recipes in my latest post, if not you can find them here. As a follow up I will share my last selection of heartwarming and delicious plant based proteins recipes with you guys. 

Mouthwatering Fudge Brownies

The best protein snack in town which will be loved by many!

Preparation

  1. Chop the walnuts and dates finely into a food processor and then add all of the remaining ingredients. Make sure that you’ve melted the coconut oil before blending it into the mixture!
  2. Place the mixture into a small baking tin and let it rest in the freezer for about 10 minutes.
  3. Melt the coconut oil in a small pan and add the raw cacao, agave syrup and coconut milk while stirring slowly until it becomes a smooth chocolate mixture.
  4. Take the brownies base out of the freezer and spread out the chocolate topping nicely onto the base. Place the baking tin back into the freezer for a minimum of 15 minutes.
  5. When everything is hardened you can cut the brownies into 8 big chunks and top it off with desiccated coconut.
  6. Ready to serve on any moment! You can store the brownies in the fridge or freezer to save them for special occasions ;)

Preparation

  1. Put the nuts into a food processor and chop finely. Add the shredded coconut, dates and melted coconut oil and let it all blend together.
  2. Spread out the mixture onto 4 small tarlet baking tins and put them into a preheated oven for about 15 minutes at 190 degrees Celcius.
  3. Place all ingredients for the topping into a foodprocessor and let it blend evenly until it becomes a smooth mixture.
  4. Take the pie crust out of the baking tins and let them cool down for about 5 minutes.
  5. Spread out the topping onto the 4 pie crusts and top it off with desiccated coconut and a slice of lime or, as a variation, a slice of blood orange.

Sizzling Cold Chai Latté

Makes you fall in love a latté.

Ingredients

  1. Chai spices (you can buy them or make them yourself by mixing these ingredients: 1 teaspoon cloves, 1/2 teaspoon of ground ginger, 1/4 teaspoon of cardamom, 1/2 teaspoon of nutmeg, 1 cinnamon stick and 2 teaspoons of mixed spices).
  2. 250 ml of soy milk
  3. 100 ml of water
  4. 1 scoop of Enjoy Natural Bio Cacao protein
  5. 2 tbsp of agave syrup

Preparation

  1. Put all ingredients into a blender and let it mix thoroughly.
  2. It’s easy as that and ready to serve! Serve it with some ice cubes to let it sizzle more! This Chai Latté is also really nice when warm. Just warm the milk and water and add all ingredients.
