• 1 sweet potato
  • 1/2 cup oats (or oat-flower)
  • 1tsp baking powder
  • 1tsp cinnamon
  • 1 egg
  • 3/4 cup almond milk










  • Peel and cut the sweet potato into little pieces.
  • Bring some water to a boil and cook the sweet potato until soft (±10 min).
  • In the meantime make your oat-flour. Use a chopper or grinder to finely chop the oats to a fine powdered consistency.
  • Use a blender to mix all ingredients together. Blend until smooth. The texture you’re looking for is thicker than a classic dutch pancake.
  • Heat up a non-stick pan on medium to high heat. Grease the pan with a baking spray or a use a little bit of oil (for example: coconut-, sunflower- or vegetable oil).
  • Pour the batter into the pan. (I like to make mini pancakes so I can build a pancakestack).
  • Cook the pancakes for about 3-4 minutes on each side, or until golden brown.
  • When ready, remove pancakes from pan and start building your pancakestack.
  • To serve, drizzle a little bit of honey or maple syrup (or any other topping you like) on top and serve with some fruit.
