The 5 Most Delicious Peanut Butter Recipes
There’s something about peanut butter… whether it’s smooth or crunchy, or whether it’s mixed in with a sweet dish or a savoury dish, it’s always delicious! As it’s so versatile, it makes the perfect ingredient for a tasty dish and it’s pretty good for you too. That’s why whenever I’m creating something new in the kitchen a jar of peanut butter is always at hand - I can always find an excuse to add a tablespoon or two!
Today I thought I’d share just five of my favourite healthy peanut butter recipes. From brilliant breakfasts, to luscious lunches, delightful dinners and saintly snacks… I’m covering it all in today’s blog!
Peanut butter banana oat smoothie
Anyone who follows me on Instagram will know I’ve got a bit of a love affair with smoothies, especially if they’ve got a dollop of peanut butter in! This tasty breakfast drink is a really healthy start to your day and helps fuels those all-important workouts!
Serves: 1
What you need
- 6 ounces milk (I use almond milk)
- 8-13 three quarter-inch frozen banana slices (about 1 frozen medium/large banana)
- 1 tablespoon peanut butter
- ½ cup quick cooking oats

Chocolate and peanut butter overnight oats
Overnight oats are another staple here at the Smith household. Simple to make and easy to prep the night before – they make the perfect brekkie for busy Fitgirls who’re always on the go! These ones are infused with chocolate and peanut butter… can it get any better?!
Serves: 1
What you need
- ½ cup rolled oats
- 2/3 cup milk (I use almond milk)
- 5 drops unsweetened stevia, or other sweetener
- ½ tablespoon unsweetened cacao powder
- ½ tablespoon dollop of peanut butter
- Sprinkling of chopped nuts (optional)

Spicy peanut chicken over rice
If you like your curry with a kick of nutty goodness, you’ll love this dish. The nutritional breakdown of this meal is super healthy yet it tastes totally delish. Go on, invite your girlfriends over for a curry and movie night and chef up this mouthwatering delight!
Serves: 6-8
What you need
- 2 tablespoons coconut oil
- 2 pounds cubed raw chicken
- 4 tablespoons Thai red curry paste
- 1 13.5-ounce can coconut milk (or light coconut milk if you want something lower in fat)
- 6 tablespoons organic natural creamy peanut butter
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 2-4 teaspoons red chili paste (depending on heat preference)
- ½ cup water
- 1 teaspoon salt
- 5 green onions, chopped
- ¼ cup fresh cilantro leaves
- Steamed jasmine rice for serving – or for a healthy kick, opt for brown rice

Peanut quinoa Thai salad
I love this recipe because it suits most dietary needs. It’s vegan, grain free and gluten free, making it suitable for the majority of healthy food addicts. The salad includes three of my favourite ingredients – peanut butter (obvs), ginger and quinoa - all super foods in my opinion! And, if you can’t do without protein, it’s easy to add a bit of chicken to the mix.
Serves: 2
What you need
- 2 cups cooked quinoa
- ½ cup carrots, sliced
- ½ cup sugar snap peas, halved
- 2 medium scallions, sliced
Dressing
- ½ cup peanut butter
- 2 tablespoon fresh squeezed lime juice
- ½ teaspoon red chilli pepper flakes
- 2 cloves garlic, crushed
- ½ teaspoon fresh ginger, grated
- 1 tablespoon vinegar (e.g. apple cider vinegar)
- salt to taste

Peanut butter brownie balls
Next time you want a healthy snack, you needn’t opt for something boring, you can indulge in one of these yummy peanut butter balls of goodness instead. At just 75 calories each and made with four clean and healthy ingredients, you won’t be able to get much better when it comes to the snack department!

- 1 tablespoon raw cocoa powder
- 12 pitted dates
