6 Super Avocado Recipes
Fit Girls get their super powers from many sources and of course one of those sources are super foods. There are many out there, but avocados are the cream of the crop in my opinion. Fit Girl Anna already gave us the low down on some of the great health benefits of this fruit (you can check them out here) but here are 6 super avocado recipes if you need to be persuaded further as to why you should make avocados a staple in your diet and convince you of their versatility too.
Avocado and Banana Ice Lollies
Made with ingredients that many Fit Girls already have in the fridge, this recipe is extremely simple and requires very little effort to prepare. Keep in mind the popsicles take at least six hours to freeze so be sure to make them ahead in anticipation of those hot summer days.
Ingredients
- 1 ripe banana
- 1 ripe avocado
- ½ cup of Greek yoghurt

Blueberry Avocado Pancakes
This sweet treat is ideal to use up that left over half of an avocado that is almost past it's best before date, where it won't go unnoticed.
Ingredients
- 3 Ripe bananas
- 2 Eggs
- ½ Ripe avocado
- ¼ c. Golden flaxseed meal
- 2 tsp. of Vanilla
- 1 T. Coconut oil for griddle
- 1 pint Ripe blueberries

Baked Eggs in Avocado
Breakfast might be an inconvenient meal of the day for some fit girls but we all know it's so important. Here is twist on a classic eggs and avocado recipe that is simple and will set you up for the day, making it well worth the effort.
Ingredients
- 2 ripe avocados
- 4 fresh eggs
- 1/8 teaspoon pepper
- 1 tablespoon chopped chives

Vegan Avocado Mayonnaise
Need a healthier low sugar, additive free swap for ketchup or mayonnaise to go with your sweet potato fries? Look no further.
Ingredients
- 2 Avocados
- 1 tablespoon White vinegar
- Juice of ½ Lemon
- ⅛ teaspoon Garlic powder
- ⅛ teaspoon Onion powder sea salt (to taste)

Mango, Orange & Avocado Salad
OK there had to be one salad recipe in here but if adding avocado to a salad sounds too boring, the flavours from the fruit and dressing make this refreshing and perfect for summer. Make the dressing, store it in a jar and take with you to add later when you arrive at a friends for a BBQ or at the beach to avoid soggy lettuce!
Ingredients
The salad
- 1 orange
- 1 mango
- 1 avocado
- 6oz baby lettuce blend
- 1/4 cup cashews
The dressing
- 1 shallot
- Juice of 1 lemon
- 1/4 cup extra virgin olive oil
- 2 Tablespoons apple cider vinegar
- 1 teaspoon agave nectar (or honey)

Avocado Fries
These fries are Fit Girl proof in moderation (with some room for substitutions) but you can give these crispy creamy fries a try knowing there is no deep fat fryer in sight.
Ingredients
- 2 tablespoons all-purpose flour
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup plain breadcrumbs
- 2 large egg whites
- 2 firm, ripe avocados
- Cooking spray
- 1 lemon, cut into 6 wedges
