Quinoa salad with spinach, smoked chicken & lime juice

Summer is on it’s way so it’s time for a tasty summer salad recipe. How about a quinoa salad with spinach, smoked chicken, cranberries, lime juice & parmesan cheese?

This quinoa salad is packed with protein so perfect as a pre or post workout meal.

So what do you need for one portion?

- 75 gr quinoa

- 2 tomatoes

- 1 smoked chicken breast

- 1 handful of spinach

- 1 handful of green olives

- 3 tbs chopped parsley

- 3 tbs chopped red onion

- 2 tbs pistachios

- 2 tbs dried cranberries

- 4 tbs shredded parmesan cheese

- 1 lime

- 1 tbs olive oil or coconut oil

- pepper and salt

Cook the quinoa and sprinkle 2 tablespoons of parmesan cheese when done. Add the juice of one lime and stir. Put the quinoa on a plate and add all of the ingredients, mix it well and finish with the last bit of parmesan cheese.

That’s it, easy but so good - enjoy your quinoa salad!
