Sugarfree Wannabe Nutella Cake
What’s better than baking a healthy cake on a lazy Sunday afternoon? Absolutely nothing...Hmmm, and it was delicious.
How it all started...Like many of you know, I have one weakness (some might call it an addiction) and it's Nutella. I would love to eat a whole jar of Nutella, but unfortunately Nutella is stuffed with, as we all know, sugars. And this is exactly what I’m trying to avoid. So I started thinking...Is there a solution for this problem? Can I eat Nutella in a healthy way? And just like that, I came up with an idea! A healthy "Nutella" cake.
Roughly said, Nutella is made of chocolate, hazelnuts and sugar. So we replace the chocolate by raw cacao, we replace the sugar by dates and we keep the hazelnuts. We make the cake gluten and lactose free and add some grated zucchini.
The result is awesome! Of course, the cake isn’t comparable to the real Nutella, but I think it’s a delicious and healthy replacement. So if you wanna eat healthier, but still want to make a Nutella/ chocolate cake, this recipe is perfect for you! It’s also very easy to make for parties, because almost everyone can eat this cake!
Recipe for 1 cake. 6 portions:
- 300 gr. of buckwheat
- 250 ml. water
- 150 gr. grated zucchini
- 1 tbsp of honey
- 1 egg
- 2 tbsp of raw cacao spices
- 1 tbsp cinnamon spices
- 2 tbsp of baking soda
- 5 dates
- 200 gr of coarse hazelnuts
How to do it:
- Preheat the oven at 170 degrees.
- Put the dates for 10 minutes in a bin with boiled water.
- Put the egg, water, honey and zucchini in 1 bowl and mix it.
- Mash the dates with a fork and add it to the mixture together with the cacao and cinnamon spices.
- Add the buckwheat to the mixture and mix it for 1 minute.
- Lastly, add the backingsoda and mix it again for a short period of time.
- Add the hazelnuts and put everything together in a cake mould.
- Bake the cake for 50 minutes.
